That's up to you, if you just want mastery rank up the pre-made ones but if you want to build a custom hound with its specific precepts and stats you have the option to make your own.

Lvl up the hound to lvl 30 for the first time and go to Legs in Fortuna and u should have an option to gild ur hound. This will reset the hound back to unranked.
